You’ve probably heard of Kobe beef, but what about Matsusaka? The Mie Prefecture town recently hosted its annual beef festival, in which farmers present their finest specimens and discuss the best methods to raise these famously sought after animals. For 83-year-old Jiro Tochigi, this meant housing them in a room adjacent to his kitchen, softening their feed, and helping them relax with enka tunes. In Matsusaka, it’s more than just a tradition — the “steak” comes with a ¥25 million price tag for the few privileged restaurants who (with special certification) can nab the top cow at auction.
