Leftover Curry Croquettes

    Basically follow this recipe, except instead of adding the cooked beef mixture and curry paste, add leftover chicken curry. Also, don’t make my mistake of skipping the step where you leave the drained boiled potatos in the pot on low heat. The batter will end up too watery, and you will be unable to form a dough. I had to chill the batter, then I cooked it a pot, then I had to add flour. 

    The inside was a lot more mushy then I would have liked. Also, make sure to fry a test croquette first – I followed the recipe and fried at 3 minutes, which was too long. They really only needed 30 seconds to get golden-brown.  But at least I only have one burnt croquette instead of eight. 

    Overall, pretty tasty. I ate it with oyster sauce, but you might like other dipping sauces better.
