  2. Anyone curious about the strange looking webby stuff around the patties that is called cull fat. It's the fat that lines around the stomach of cattle sheep, pig, and goat.
    Cull fat is usually paired with leaner meats to lock in moisture to prevent dryness and add some flavor.

  3. So you take The meat and form it into balls. Why not just take the meat and form it directly into the paddy on top of the skin? You're wasting time and this is inefficient unless this is a low volume restaurant where you have lots of time to waste just a thought.
