This 18 year old girl works with her family at their family run business in Fukuoka where she has been learning the sushi trade from her father. She makes her debut as a sushi chef and hopes to carry on the family tradition and make delicious sushi like her father.

    I think in a lot of cases all over the world, successors within a family for a family business are becoming more scarce right now. Hopefully that won't be the case for very long, but for right now, this is heartening to watch as a lovely sushi restaurant continues on!

    This young lady is EXTREMELY PROFESSIONAL, her knife skills are so precise and clean, the way she handles ingredients with devotion like it’s sacred… I bet very soon she’ll become Itamae (the head of sushi preparation). I love when women become Itamae, despite what some pompous purists might say… male sushi chefs sometimes are overbearing and entitled, even if their food isn’t good. Women put their hearts into every morsel of food and serve it like they’re offering food to a god. They’re humble and attentive to every little detail. I wholeheartedly support women aspiring to become chefs👏

    About this restaurant… they say the first impact of good food is visual, and then come the aromas and flavors. What incredible display of beautiful food this one has… beautifully arranged, beautifully prepared, everything glistening fresh and colorful and — I’m 100% certain — delicious. Kudos to the brilliant chef dad, it’s a pristine, calm, well-organized, very functional establishment. That has to be one of the most beautiful sushi assortments I’ve ever seen on Youtube (I love the intriguing way he presents his tamagoyaki, it’s not a nigiri, not a roll, but both😆). We’re so used to fill our bellies with cheap, flavorless kaiten sushi nowadays we forgot how important every ingredient is, how they taste and compare to one another. This is a meal to slowly savor and reflect, and celebrate food and life properly😊
