Great soba and tendon (shrimp/veg tempura rice bowls) can be found at good soba shops in Japan. Soba noodles are much more healthy for you than udon or ramen. Soba is made from buckwheat flour and has fewer calories, but more fiber and protein. Zaru soba is cold soba noodles that are dipped into a chilled dashi/broth and “slurped down.”
