Yoshihiro Narisawa, one of Tokyo’s best-known chefs, celebrated the 15th anniversary of his eponymous restaurant at the end of 2018. After having spent eight formative years in Europe under the guide of prominent chefs to hone his craft, he opened his first restaurant in Odawara, Kanagawa Prefecture. Fifteen years later, his modernist techniques — along with an unconventional meld of classical French gastronomy with Japanese principles and local ingredients — put his name on the map. His iconic restaurant, tucked away in Tokyo’s plush, upmarket Aoyama district, is now an essential port of call for visiting gastronomes and is rightfully included in numerous lists of the world’s top dining spots.
