In China, crayfish is king. Chinese people consume 90% of the world’s crayfish every year. But the species they eat is not actually native to China. Just a few decades ago, it wasn’t even considered food. So how did crayfish end up becoming such a beloved dish? We talked to some crayfish enthusiasts and experts to find out.

  3. 😂😂 as a southerner, there’s a better way. Just squeeze the tail one time and pull the meat out. It’s literally a couple seconds of work.

  9. Tip: Break off the side of the shell by pressing down and then just pull out the meat.

  11. You don't have to peel it off segment by segment. Remove the first segment, put pressure near the end of the tail and pull. If it's cooked correctly, you can suck it out with the pressure on the tail. However, I like to do it the first way so I can dip the tail meat in the sauce.

  12. As a Louisianan, I would dust that chef!!! It’s ridiculous how many crawfish I’d be able to peel and eat in 2 minutes!!! That’s light work

  14. I'm from Shanghai. When my family came to US to study in the late 1980s, there was no crawfish in China. Not even in the 90s. So I first ate and loved crawfish studying at UT-Austin (crawfish is big in Texas too). Then during my periodic visits to see my relatives in China in the 2000s I saw people eating crawfish. I was surprised since even many northern Americans never had crawfish. And from the people spoke with, most Chinese don't know crawfish eating came from Louisiana.

  15. I’m pretty sure crawfish are also popular because they are often raised in rice fields. Because they both have a 2-year growth cycle, it is convenient to plant them both together, as they help each other grow. Makes things cheaper and more nutritious 🍚 🦞

  16. Turn the Chinese on to a food source and they will consume it to the Point that nobody else can afford it , lobster , crabs , shell fish , human gannits.
