@veggiekins makes homemade Japanese Senbei as we celebrate Asian American and Pacific Islander food and culture this AAPI Heritage Month.
Ingredients:
3⁄4 cup rice flour
3 tbsp cooked white rice
1/4 tsp sea salt
2 tbsp vegetable oil
4 tbsp water
1 tbsp soy sauce
2 tsp mirin
Furikake rice seasoning
Sesame seeds
Nori seaweed sheets
Directions:
Cook the rice in your rice cooker.
Take your cooked rice and combine with rice flour, salt and oil. Grind in food processor.
Mix in a bowl with the rice seasoning and knead. Shape it into dough balls.
Flatten the dough balls between 2 pieces of wax paper with a roller until they become 1 1⁄2 inch discs.
Place the discs on a baking sheet and bake for 9 minutes.
Flip with a spatula and bake for another 9 minutes, or until the crackers brown. Remove from the oven and let cool for 1 minute.
Mix soy sauce and mirin in a bowl.
Brush crackers with the soy sauce mixture and return to the oven for 2 to 3 minutes. Sprinkle with sesame seeds and wrap with nori.
