Top Hakodate Style Shio Ramen in Tokyo at Goryokaku

Hakodate Shio Rāmen Goryokaku (函館塩ラーメン 五稜郭) in Tokyo is a hidden gem for ramen enthusiasts, especially those seeking authentic Hakodate-style shio ramen. Located in Ogikubo, this cozy establishment offers a clear, delicate broth crafted from premium Hokkaido ingredients like kombu and scallops. The noodles, made in-house, are medium-thin and perfectly complement the soup’s subtle umami. Additionally, you will find many references to Hakodate and Hokkaido in the shop, like their offering of Hokkaido exclusive types of beer which are not sold in the rest of Japan like Sapporo Classic.

The restaurant’s dedication to quality has earned it a spot in the Michelin Guide’s Bib Gourmand category in 2024, highlighting its exceptional yet affordable offerings. Diners often praise the tender chashu pork and the unique addition of “fu,” a piece of wheat gluten that absorbs the broth’s flavors beautifully. Another must get is the addition of gagome kombu, which comes frizzy looking at first, but turns into a wet and slimy mass, once it touches the soup. Does not sound amazing at first, but is actually full of flavor and umami! The scallop rice, a signature dish, is also highly recommended.

  3. Another great video 🙂 when I went to Goryokaku I got a bit lost with the vending machine and didn't ordered the kombu topping, this was my biggest struggle, to understand which toppings I'm getting hehe, cheers
