“Wagyu” in Japan is a general term that refers to all Japanese beef cattle.

While “Kobe beef” or Kobe Wagyu refers to the very specific type and breed of cattle that are raised around Kobe, in the Hyogo Prefecture.

Like everything else, as you would expect, the Japanese take the craft of raising cattle very seriously, with Kobe being the center of it all.

Known to be one of the highest quality cuts of meat in the world, we had to start the morning off with a flame grilled Kobe A5 steak for breakfast. Rich, fatty-marbled, medium rare, melt in your mouth cut of beef needs nothing more than a pinch of salt.

It will set you back a few shekels, but i promise if you need to take a second mortgage its worth it.

Lesser known is Kobe’s Chinatown, one of the largest in Japan. People line up, sometimes an hour, to try the Cantonese style pork buns at Roshoki.

Pro tip – grab some fried dumplings from one of the other shops to have while you wait.

When you get to the front of the line you can watch the chefs tirelessly crank out dumplings in clouds of steam like some dreamy mirage or glimpse into heaven.

Don’t even bother waiting for them to cool, eat them while they’re still molten lava and incinerate your mouth.

Two steaks, a dozen and a half of dumplings you might need a break. Take the cable cars up to Nunobiki Herb Gardens where you can find 75,000 herbs and flowers blooming throughout the year. It’s a lovely way to spend a few hours digesting before heading back down the mountain for dinner, as a hungry boy.
