Lee Utsumi makes handmade bread at her shop, Lee’s Bread (@leesbread), in Oiso, Kanagawa. On any given day, she offers around 20 different varieties, most baked with organic Japanese flours and ancient grains. At first, cooking was just a hobby, but after she earned her culinary degree, it became a career. On a road trip to San Francisco, she fell in love with a moist sourdough with a really good crust, and was inspired to try her hand at making fresh bread of her own. Though she started small at first, carting her bread to sell at festivals and farmer’s markets, she opened her own brick and mortar store in June 2017 and hasn’t looked back since. Story link in bio.
