The town of Kure in Kochi may be less known than the same-named city in Hiroshima Prefecture, but the area’s passion for katsuo (skipjack tuna) puts it on the food-lover’s map.

Katsuo has been a major part of life for some of the residents, including Takahiro Tanaka, owner of Tanaka Sengyoten, a fish shop in the Kure Taisho Town Market. Tanaka and the other fishermen of Kure make use of the most basic yet sometimes underappreciated means to get fish: the rod and line. This method, called ippon-zuri in Japanese, induces less stress on the captured fish, resulting in the tastiest katsuo for seafood-lovers to enjoy. Link in bio. 📸: Robbie Swinnerton @tokyofoodfile
