While I’m no stranger to sushi, experiencing an authentic sushi meal at a real Japanese sushi restaurant was a first. On my recent trip to Hokkaido, I made it a point to visit Masazushi’s main branch in Otaru. This renowned sushi establishment, with branches in Tokyo’s Ginza and Shinjuku districts, as well as Sapporo, has its flagship location in Otaru. Even on a weeknight, the queue was long. I, someone who typically avoids queues, waited almost an hour, a testament to Masazushi’s popularity.

Beyond the delicious sushi, what truly impressed me was witnessing the sushi chef prepare my meal right before my eyes. From slicing the fresh fish and molding the rice to meticulously arranging the final dish, including a leaf garnish (I’m still pondering whether it was edible or purely decorative), the chef’s skill and precision were captivating. The entire process took about 15 minutes, a condensed version of the birth of sushi, each step imbued with the spirit of a true artisan.

Seeing the preparation firsthand enhanced the dining experience, adding a touch of warmth and appreciation. While the price was a bit steep (5400 yen), the unique experience was well worth it.

Masazushi Honten, established in 1947, boasts over 70 years of history. Known for its fresh seafood and traditional techniques, it’s also famed for being featured in the popular manga “Shota no Sushi,” further boosting its appeal.
