I used to love this chain ramen shop in Japan called Machida Shoten (町田商店) and they had the best gyoza ever, so crispy with a little bit of vinegar sauce for dipping. Can anyone recommend something to fill the void?(I love cooking but this is a bit outside of my expertise!)

Ajinomoto is decent
I do like the pork and leek umami dumplings made by DayLeePride. It’s a subsidiary of a Japanese company.
