Kurume ramen requires boiling the same soup stock every day and topping it up for the next day, meaning that some restaurants in Kurume have broths that are decades old. Maruboshi has been open since 1958, an institution in the ramen world and the first known ramen store in Japan to open 24/7. While it’s no longer the case, it continues to operate long hours, and is beloved by many. It’s absolutely fascinating to think that the flavour of this broth will undoubtedly change, and it will be different by the time some of you visit!
