Pretty pleased with myself for actually remembering to pop out for cabbage before this meal, which I often forget to do. To my own detriment too. I really love the fresh shaved cabbage in katsu shops and leaving it out at home really does the dish a disservice I think. What about you? Is shaved cabbage a key component or do you swap it out for something like salad, or omit it all together?
