Having visited three different belt sushi places – I noticed it is the exact same smoked flavor. I’m thinking it is probably from something similar to liquid smoke. Does anyone know what it is?

    It’s most likely to be tare, basically mixture of soy sauce, mirin, sake, infused with aromatics like ginger and scallion. The smoky flavor you tasted probably came from the sauce with torched with propane or butane blowtorch, although some restaurants are known to just dip a lit binchotan charcoal into the sauce to impart smoky flavor
