Unique haccho miso dishes from Nagoya, Japan

If you don’t know about haccho miso, go watch our haccho miso reel! This dark, ultra-savoury miso is a rare type of red miso that’s fermented for 2 years and has a distinctly acidic, slightly bitter flavour. While it’s quite strong on its own, it’s usually sweetened to make a richly sweet-savoury sauce, which suits the strong palates of Nagoya’s population. They’ve managed to incorporate haccho miso in every corner of their cuisine, so there’s bound to be something for everyone!
