Ramen is a pretty broad term, but most of the time, it describes the type of noodles used for the soup. If the noodles are udon, then it’s a bowl of udon, not ramen. They’re more or less mutually exclusive terms. Soba is where the lines start blurring, since an early form of ramen was also called chukasoba, meaning soba from China. But udon is uniquely a Japanese noodle.
