The Bowser / Koopa discrepancy is because his name was/is Koopa (Kuppa) in Japanese. Donkey Kong Country will likely be the same title, given it’s the same between translations.
This is one of the most brilliant ideas for a roller coaster ever. My childhood nostalgia is unparalleled with this attraction.
Disney is so stupid. Shoulda did this instead of Star Wars, which they ruined.

It's still hard to believe that this park is going to be real, no Blue sky abandoned concepts, it's not going to be over sea's this is the real deal. And on the plus side this is literally in my own backyard in Florida.

FYI the Donkey Kong Country games aren't called Donkey Kong Country in Japan. They're called Super Donkey Kong.

It's a cultural thing, but Epic Universe would probably have a smaller variety of food, drinks, and stuff compared to Universal Studio Japan.
Generally, Disney and Universal parks in Japan offer a way bigger range of food and merchandise than US parks, kinda like what you find in Nintendo stores in Japan.
Socially, things like character-themed items are way more popular in Japan than in the US. I've noticed this obsession with food and characters in Japan—it's just something everyone gets into, regardless of age or gender or interest.
IP commerce is massive there.
